Cheats Quiche…
Save MoneySaves time

PREP: 10mins BAKE:30mins

INGREDIENTS:
1 sheet Puff Pastry
4-6 Eggs
1/2 cup Milk
2 Bacon rashers
1 Onion
1½ cups chopped mixed vegetables
½ cup grated Cheese

1. Preheat oven to 180°C (160°C fan forced).
2. Defrost pastry into a greased quiche dish.
3. Give the onion (chopped) and bacon (chopped) a quick fry.
4. Whisk eggs and milk in a bowl. Add vegies, cheese, herbs if you wish and salt and pepper to taste.
5. Add bacon and onion.
6. Pour mixture into the quiche dish and bake for about 30 minutes (or until egg is cook in the middle.) Serve with salad.

If you don't have any puff pastry in the freezer try this easy pastry recipe.

EASY PASTRY
2 cups of Self Raising Flour
150 grams of cold cubed butter
1 Egg (beaten)
splashes of cold water

With clean hands knead the butter into the flour. Add egg and a few splashes of water to achieve a doughy consistency. Spread into your greased dish/pan as needed.

Spinach Savoury Slice…

PREP: 15 minutes COOK: 45 minutes

INGREDIENTS:
5 Eggs
1 cup Milk
4 Bacon rashers, chopped
1 Onion, finely chopped
1 cup Carrot, grated
10 Sao Biscuits, crushed
1 cup Spinach, chopped
1 cup Cheese, grated

Preheat oven to 180°C (160°C fan forced).

Cook Bacon and Onion in a frypan or in the microwave between paper sheets. Beat Eggs and Milk. Add other ingredients and mix well.

Pour into a greased slice tin or baking dish and bake for 45 minutes. Cut into slices and serve cold or hot.

Zucchini Pie…

PREP: 10mins COOK: 45 mins

Great for turning zucchini's into a delicious healthy lunch or side dish. Also yummy cold in the lunchbox.

INGREDIENTS:
i cup Self Raising Flour
½ cup Vegetable Oil
2 cups grated Zucchini
1 cup grated Cheese
1 Onion
3-4 Bacon Rashes or Ham
5 Eggs (or 3 Eggs and ½ cup Milk)

Mix ingredients together and pour into a greased large pie or souffle dish.

Bake in a moderate oven for approximately 45 minutes.

Sausage Rolls…

PREP: 30 minutes COOK: 60 minutes

INGREDIENTS:
1 packet frozen Puff Pastry sheets (pack of 6)
1 kg Sausage Mince
1 small Onion (optional)
2 cloves Garlic
2 small Carrots
1 cup grated Cheese
1 Egg
¼ cup of Milk
1 packet of Sesame Seeds

1. Separate and thaw the sheets of ready rolled puff pastry.
2. Mix sausage mince, chopped onion (optional), crushed garlic cloves and grated carrots. Add a little salt and pepper to taste.
3. Halve each pastry sheet with a knife. Make small side-by-side score marks with a knife, along one side of each pastry half.
4. Mix egg and milk together and use a basting brush to paint this mixture along score marks in pastry sheets. This will enable the pastry to stick closed when rolled.
5. Divide mince mixture into 12 even portions. Sprinkle a little plain flour on your worktop and hand-roll each mince portion into sausage shapes.
6. Place mince rolls onto pastry sheets, sprinkle with grated cheese, and roll the pastry around mince into sausage shapes.
7. Cut each roll into whatever size sausage rolls you prefer.
8. Place the rolls onto tray covered with baking paper allowing room between each roll. Prick tops of rolls a couple of times with a fork.
9. Paint each roll with more of the egg and milk mix and sprinkle with sesame seeds.
10. Bake in oven at 200°C until brown and puffed. Smaller rolls need only 20 – 30min, while larger rolls may take longer to cook.

Very economical and popular.

Makes absolutely loads, Feeds 10+.

Spinach Pie

PREP: 15 mins COOK: 35 mins

INGREDIENTS:
4 Bacon Rashes, chopped
1 Onion, chopped
¾ bunch Spinach (8 leaves approx), roughly chopped chunky
3 Eggs
1 cup grated Tasty Cheese
Salt and Pepper
¼ cup Olive Oil
2 Puff Pastry sheets

Preheat oven to 220°C (200°C fan forced). Cook Bacon and Onion in a frypan or in microwave between paper sheets.

Mix all ingredients in a bowl. Place one Pastry sheet in a 30cm square baking dish. Pour Spinich mix onto pastry sheet. Top with other pastry sheet. Use a fork around the edge of the pie to seal the edges and make some air holes in the top of the pie. Brush the pie with milk using a pastry brush.

Cook in oven for 10 mins at 220°C to cook top. Turn the oven down to 200 °C and cook for a further 25 mins.

Pasta Carbonara
Save Money

PREP & COOK: 20mins

INGREDIENTS:
Oil
2 cups dried Pasta
6 Bacon rashers, chopped
1 Onion, chopped
1 teaspoon crushed Garlic
½ cup Cream
½ cup Milk
Pepper
1 Egg, lightly beaten
½ cup grated Cheese

1. Boil pasta until cooked.
2. Meanwhile, heat oil in frying pan and add bacon, onion and garlic then cook.
3. Stir in a cup the cream, milk, pepper and egg.
4. Drain pasta and add to the frying pan then pour over cream mixture.
5. Stir until the sauce thickens then add cheese and cook until the cheese is melted.

Serve hot with bread, salad and/or vegetables.

Bread Pizza…

PREP: 5 minutes COOK: 5 minutes

INGREDIENTS:
Slices of bread
Tomato Paste
Tomatoes
Ham
Grated Cheese

Toast bread then spread a thin layer of Tomato Paste over the surface. Slice Tomatoes place on top. Add Ham and Grated Cheese over the tomatoes.

Grill for 5 minutes on medium or until cheese has melted.
