Chicken Flavoured Rice...

Plain boiled rice just add a chicken soup sachet after it's cooked and you have a beautiful chicken flavoured rice kids love it.

Potato Bake with 4 ingredients...

PREP: 5mins COOK: 25mins

I make a very easy potato bake by slicing potatoes.
Then pouring over a large lite sour cream, that has been blended with a french onion soup mix.
Top with some lite shredded cheese.

Mini Ham Quiches 1…

PREP: 5mins COOK: 12mins

INGREDIENTS:
4 Eggs
100 grams Ham
¾ cup of grated Cheese
½ cup Self Raising Flour
Salt and Pepper
1 Tomato (optional)
Chives (optional)

Preheat oven to 180°C. Whisk Eggs then add Ham, Cheese, Flour, Salt and Pepper together in a bowl.

Lighly grease a muffin tray and spoon mixture in. Slice Tomato over each quiche and spinkle with Chives.

Bake in oven for about 12 minutes or until cooked through.

NOTE: These are also delicious as a dinnertime meal with salad or on their own. Kids can take these for lunch the next day.

Mini Ham Quiches 2…

PREP: 5mins COOK: 10mins

INGREDIENTS:
3 Eggs
1 cup Milk
250g Bacon or Ham, chopped
1 cup grated Cheese
¾ cup crushed Saos
1 small grated Zucchini
½ cup Spring Onions, chopped
Salt and Pepper

Preheat oven to 180°C. Beat Eggs and Milk in a bowl then add all remaining ingredients. Pour into greased mini muffin tins.
Bake for 10 minutes or until golden brown.

Creamy Baked Cauliflower…

PREP: 10mins COOK: 20mins

INGREDIENTS:
3 cups Cauliflower flowerets (approx. ½ medium cauliflower)
1 packet Cream of Chicken Soup
1 cup Milk
1 cup Water
½ cup Breadcrumbs
½ cup grated Cheese

Preheat oven to 200°C. Steam or microwave Cauliflower until nearly cooked, then place in greased oven dish. Meanwhile, add Soup Mix, Milk and Water in saucepan and boil while stirring. Pour soup mix over cauliflower. Sprinkle Breadcrumbs and Cheese on top and bake for 20mins.

NOTE: This dish is saucy and goes well with  plain meat and vegetables.

Green Beans with Rice…

PREP: 5 mins COOK: 30 mins
Serves 4 as a main dish or halve the ingredients for a side dish.

INGREDIENTS:
1 Onion, chopped
2 teaspoons Garlic
1 kg Green Beans
2 tablespoons of Tomato Paste
3 cups Water
Salt and Pepper
2 cups Rice

Boil the Rice in a saucepan. Brown Onion and Garlic in a frying pan with oil. Add Green Beans, Water and Tomato Paste. Simmer for 30 minutes. Add salt and pepper to taste.

BBQ Vegetable Parcels…

INGREDIENTS:
Any Vegetables you desire. This picture has:
Eggplant
Pumpkin
Broccoli
Carrot
Zucchini
½ teaspoon Oil (per parcel)
Herbs

Preheat BBQ or oven to 180°C. Cut vegetables into roughly even sizes. Prepare square foil pieces.

Stack vegetables on top of foil and drip Oil over the top. Sprinkle with herbs.

Wrap foil around vegetables to make parcels without any open bits. Place on a baking tray and place them in the BBQ or oven for 45 minutes or until cooked through.

Carrot and Zucchini Fritters…

PREP & COOK: 25mins
These are really yummy.

INGREDIENTS
1 medium Carrot
1 medium Zucchini
2 Spring Onions
1/3 cup reduced fat smooth Ricotta Cheese (or Grated Cheese)
1 Egg
½ cup Wholemeal Flour (or White Flour)
¼ teaspoon Cayenne Pepper (or normal pepper)
Olive oil spray

Grate Carrot and Zucchini and chop Spring Onions.

Mix in a bowl Vegetables, Ricotta Cheese, Egg, Flour, and Pepper.

Heat non-stick frying pan and lightly spray with oil. Place large spoonfuls in frypan, flatten and cook for 7 minutes until golden. Turn to other side and cook for a further 7 minutes or until golden.

Cheese Baked Potatoes…

PREP: 10 mins COOKING: 25 mins
This is great for something different.

INGREDIENTS
Potatoes
Oil
Grated Cheese (Parmesan is the best)

Preheat oven to 180 degrees. Peel and halve the amount of potatoes you need (remembering they shrink when baked). Place potatoes around the edge on your microwave plate. Cook on high until potatoes are firm but nearly cooked (approximately 8 minutes).
Arrange potatoes around a baking tray and use a knife to cut slits over the tops of the potatoes. Brush lightly with oil and sprinkle grated cheese over the potatoes. Bake for 15 minutes or when cooked.

Sweet Potato and Potato Bake…

PREP: 10 mins COOKING: 30 mins
This saucy potato dish is great to serve with a plain meat.

INGREDIENTS
3 large Potatoes
1 large sweet Potato
300 grams Cream (for a healthier option substitute with Milk OR half Cream/half Milk)
½ teaspoon crushed garlic
Salt and Pepper
Grated Cheese (Parmesan is the best)

Preheat oven to 180 degrees. Peel and thickly slice potatoes and sweet potato then layer in an oven proof dish. Mix garlic, salt, pepper and cream (or milk/cream) in a cup then pour over the potatoes*. Cover with cling wrap and cook in microwave for 10 minutes. This may overflow but it is an easy mess to clean up. Sprinkle cheese over the top and put in oven and cook until potatoes are soft (approximately 20 minutes).
*GET CREATIVE: Add cooked chopped bacon, sundried tomatoes, olives and/or a lightly beaten egg.

Bacon and Spaghetti Dish…

PREP & COOKING: 30mins

INGREDIENTS
Spaghetti
4 rashes Bacon, chopped
½ cup Peas
½ cup Cream
1 teaspoon Garlic

Boil Spaghetti in a saucepan until sticky and cooked through. Boil peas in the microwave until cooked while cooking the chopped bacon in a frypan. Add to frypan the spaghetti, peas, cream and garlic and stir until combined and hot.

This is also a fantastic side dish for BBQs, served hot or cold.
